Cookie Brownies

Here we go: Brownies+Cookies. Has there ever been a better combo?! I have been wanting to make brownie cookies for a while and let me tell you these blew my expectations out of the water! Buckle in because your taste buds are in for a wild ride when they get ahold of one of these!

Big news guys!!! I passed my drivers test!!! Let me tell ya I was so nervous for this drivers test of mine. For like the past week I was nervous and anxious and just ugh. Now though it is a) such a relief to never have to take the drivers test again and b) so awesome that I have my license!!! I have big plans! Like driving to the grocery store that is like a mile from our house… Or getting ice cream at the ice cream shop that is like 5 miles from our house… Umm yeah like I said big plans right?

Man that driving test sure was stressful! So I booked my drivers test one week in advanced and I was so freaked out for that entire week! In movies and TV shows, driving tests are always shown as a hilarious disaster and now after taking the test I can see why! I think the reason those drivers test scenes from movies are so funny is because they are so relatable! Phew well anyways, I am just SO glad I never have to take that test again!

OK so these bars… Serious yum. Try them. While there may seem like a lot of steps, do not be alarmed. The cookie dough can be made in a day advanced, and any cookie dough that is leftover can be used to make cookies! Enjoy!

Brownie Cookie Bars

Ingredients:
For the cookie dough
6 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 egg
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 teaspoon baking soda
1 cup flour
3/4 cup mini chocolate chips

For the brownies
2 sticks unsalted butter
6 ounces semi sweet chocolate
2/3 cup unsweetened cocoa powder
2 cups sugar
1/4 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
4 eggs
1 1/4 cup flour

Directions:
For the cookie dough
1) In a large bowl using a stand or handheld mixer, cream together butter and sugars on medium-high speed. Add egg, vanilla, salt, and mix well.
2) Add flour and baking soda on low-speed, mixing just until combined. Stir in chocolate chips.
3) Roll cookie dough into 24 1-inch balls and place on a cookie sheet. Freeze for at least 1 hour, or refrigerate overnight.

For the brownies
1) Preheat oven to 350 degrees. Spray 9×13 inch baking pan with cooking spray and set aside.
2) Melt butter and chocolate together either in the microwave, or over a stove top, stirring occasionally. Remove chocolate mixture from heat.
3) Stir in cocoa powder until completely incorporated. Add sugars, vanilla, and salt, stirring to combine.
4) One at a time, mix in eggs. Gently stir in the flour just until combined. The batter will be thick.
5) Spread brownie mixture into prepared pan and bake for 13 minutes. Pull brownies from the oven and evenly place 24 cookie dough balls into the brownies. Continue baking for 18-20 minutes, or until a toothpick inserted in the middle comes out clean.
6) Allow bars to cool completely before slicing in. Bars will keep for up to 5 days in an airtight container.
